Dekho chand aaya nazar, Mubarak ho aap sab ko Eid-ul-Fitr!
Ever imagined Eid without Seviyan? Nor have we!
Here’s our take on a low lactose, nutritious bowl of irresistible seviyan ki kheer:
1 tbsp ghee
1 bowl of vermicelli (seviyan)
4 cups milk
6-8 tbsp sugar (or according to taste)
1 tsp cardamom powder
1 tbsp slivered almonds
1 tbsp chopped cashews
1 tbsp raisins
10 strands of saffron (kesar)
Heat ghee in a pan. Add cloves and roast for a few seconds.
Add vermicelli and roast till golden brown in colour
Reduce flame and add milk (be careful, it splutters)
Bring to boil while stirring continuously
Add sugar and keep stirring
Now mix in almonds and cashews
Add cardamom powder
Keep stirring for 5-6 minutes or till the milk thickens and the texture turns creamy
Switch off flame
Add raisins and mix
Garnish with slivered almonds
Serve and enjoy hot or chilled!
P.S. Replace sugar with jaggery (gur) for a healthier version of this kheer!
